Author Kim O’Donnel recently released The Meat Lover’s Meatless Cookbook: Vegetarian Recipes Carnivores Will Devour, for people that love to eat meat but might also want to eat less of it. In the book’s foreword the Center’s director, Dr. Robert Lawrence, reintroduces the idea to readers that people can eat less meat and still maintain a healthy lifestyle.
Uniquely organized into the four seasons, Ms. O’Donnel’s offers an array of practical recipes from Rocket Lasagna to Hummus-Stuffed Tomatoes. The Cookbook, just as the Meatless Monday campaign does, serves as a reminder that improving personal and planet health can be done one meal at a time without sacrificing time or taste. One hopes that Ms. O’Donnel’s recipes offer a way for the average American, who, on average, eats between 135% and 170% of the recommended daily allowance of meat to reduce intake.
